Carlos Ruiz: Manager. Carlos Ruiz has been part of Le Café Du Marché since it opened its doors in 1986.

Roberto Muscas: Manager. Roberto Muscas joined Le Café Du Marché in 1988. He has compiled the wine list and regularly updates it with interesting choices.

Simon Cottard: Executive Chef, Simon Cottard started his career training with the Roux brothers and spent time working in the Vosges region of France. Simon has been part of the team at Le Café du Marché for over 20 years now.

Phil Hayes: Head Chef. Phil Hayes works closely with Simon to plan all menus, they employ a strict philosophy of using seasonal ingredients where possible - inspiring Phil to regularly use fresh produce from his allotment

Keith Davis: Pastry Chef. Keith Davis freshly prepares the tempting tarts, trifles, sorbets and ice-creams that feature on Le Café du Marché dessert menu on a daily basis.
